When the tomatoes are heavy on the vine and the butter is cold, this is what I make three nights a week. The crust is forgiving, the filling is honest.
It happened again this morning. I was photographing the apple cake at the kitchen table, the same oak table my grandfather built in 1948, and the light came in at that exact angle that only happens in late August. My dog was asleep on the rug. There were tomatoes on the counter from the farm stand down the road, and I thought — I want to tell you about this. I want you to be here.
That's the whole reason I started writing this newsletter sixteen years ago. Not for the pageviews, not for the SEO, not for the partnerships (though those came, and kindly). I started it because cooking at home is better when someone is telling you about it — when a friend says I made this last Tuesday and it worked, and here is the small thing I changed. This week we have that tomato galette, which has gotten me through every August since 2014, and a brown-butter apple cake that smells like the school year is about to start.
